I love the flavor of roasted sweet potato and when paired with thick Greek yogurt, it turns into the best pudding! This Healthy Sweet Potato Pudding is creamy and comforting, and is naturally sweet from the mashed roasted sweet potato.

It reminds me of pie filling, but is also a great source of protein, calcium, and vitamin A.

TIP: This sweet potato yogurt works for dessert, of course, but it’s also a great snack or breakfast! You can even top it with crushed up granola.

I like to use vanilla Greek yogurt from Siggis, which has great flavor but not a ton of added sugar, but you can use any brand you like as well. If you’d rather use plain Greek yogurt, that’s fine too—just sweeten to taste with a little maple syrup.

TIP: You can top it with a little sprinkle of pumpkin pie spice or cinnamon.

Can I make this dairy-free?

You can swap in your favorite non-dairy yogurt, though a thicker Greek-style one will work better for the consistency.
