Welcome to the recurring series where I share a look at what I actually served during a random week. My goal is to be more off-the-cuff than I am in my videos on social media—or in my photography here on my website which are taken by a professional photographer when my kids are in school—as another way to share the reality of feeding kids.

And this week was the first week I had with the kids that we were in the full swing of school and after school activities. Honestly, over the summer I had forgotten just how completely insane it is to have after school activities that occur right around the same time as dinner.

I know that not everyone is at that stage of life yet, but I also know it is hard to cook or even assemble dinner when the meal occurs at what is typically a very busy time of the day—no matter the age of your kids. (See more about that in my post last week on How to Cook When Schedules are Nuts.)

The five meals here used basic ingredients, were eaten by myself and my three kids, included a mix of nutrients and flavors, and most importantly…were easy for me to actually pull off.

  1. Love this type of post! Thank you for sharing what the kids actually ate during the meal. It can be hard to remember it’s ok if they don’t eat much sometimes.
