Welcome to the recurring series where I share a look at what I actually served for dinner during a random week. My goal is to be more off-the-cuff than I am in my videos on social media—or in my photography here on my website which are taken by a professional photographer when my kids are in school—as another way to share the reality of feeding kids.

I know it is hard to cook (or even assemble dinner) when the meal occurs at what is typically a very busy time of the day—no matter the age of your kids. (See more about that in my post How to Cook When Schedules are Nuts.) So I hope this helps you get some new ideas for how to pull off dinner.

The five meals here used basic ingredients, were eaten by myself and my three kids, included a mix of nutrients and flavors, and most importantly…were easy for me to actually make.

Did each kid love every meal? No, I am certainly not a wizard! But in each case, we all had enough to eat and I didn’t resent the work that went into the meal. A good outcome if there ever was one.
