Turn overripe bananas and basic pantry staples into the yummiest Banana Blondies. Think flavors similar to chocolate chip cookies, plus the added bonus of banana!
Preheat the oven to 350 degrees F. Grease an 8x8-inch pan with nonstick spray.
Add all the ingredients (except the frosting or chocolate chips) to a large bowl. Stir well to combine thoroughly.
Pour into the prepared pan and bake for 24-26 minutes, or until the center is set and the edges are lightly golden brown. Remove from the oven and place onto a wire rack to cool completely.
Slice and serve, topping with Cream Cheese Frosting or melted chocolate chips if desired.
Notes
Store Banana Blondies in an airtight container at room temperature or in the fridge for up to a week.
Top with Cream Cheese Frosting or melted chocolate chips if desired. Or stir mini chocolate chips into the batter and bake.
Be sure to use very ripe bananas for the best flavor.
I tried to keep the added sugar as low as possible in this recipe, so note that when looking at the amounts. Feel free to experiment if you prefer.
Use gluten-free all purpose flour in place of regular if needed to make this recipe gluten-free.
